Quality of Meat
Our restaurant serves our beef with minimal seasoning in order you to enjoy the taste of beef itself. Use charcoal to grill, and prepare homemade sauce well fits with Kobe beef, homemade miso-sauce, pink rock salt from Himalayas. Depending on part of beef, we provide fresh lemon, soy sauce with wasabi, Oroshi Ponzu, so please feel free to ask for them.
The most important tip to enjoy the beef is how to grill:
① Before put the beef on the iron grill, leave it until it gets hot enough.
② Broil it to medium rare is recommended. Try not to put beef on the iron grill more than you eat once.
③ Please not to turn over the piece of meat more than once otherwise you will miss the gravy.
④ Burnt food particles on the iron grill degrades the taste of meat. Please feel free to ask for changing the iron grill.
